About Me

Hi, I’m Becky! I’ve been gluten-free for 11 years and I have zero professional baking experience. I bet you didn’t expect to read that, did you? ?

But what I do have, is 10+ years of gluten-free baking experience – everything from the triumphs to the epic fails and everything in between.

And you know what? After all that, despite having no professional training or anything – I now know how to bake ANYTHING (almost!) and NOBODY ever knows or cares that it’s gluten-free.

So basically, I just wanted to share my knowledge with you so that you can do exactly the same. So whether you’re a total beginner, or an expert baker, you’re in the right place as I’ve got 15 easy lessons to get you started.

This isn’t just a list of 15 of my blog post recipes – every single recipe here has a full, in-depth video tutorial for you to follow along with.

Also, who here is gluten-free AND dairy-free? Well, if you are, 14 of these 15 lessons (not the no-bake cheesecake, sadly) can easily be made dairy-free. In the full recipe posts or in the videos, I’ll indicate what swaps you’ll need to make and when.

A lot of these recipes are low FODMAP or can easily be adapted to be – the same goes for if you want to make any of these recipes vegan too.

Gluten-free baking masterclass: What You’ll Learn

I chose these 15 specific lessons because they cover a HUGE amount and you’ll learn a variety of different baking techniques – despite all the recipes being incredibly easy. You’ll learn:

  • How to make perfect sponge cakes – a two-tiered round sponge, a traybake, a loaf cake, as well as cupcakes (filled with jam – yum!)
  • How to make bakery-style cookies
  • How to make buttery shortbread biscuits.
  • How to make EPIC fudgy brownies and blondies that are gooey – not like cake in the middle.
  • How to make jam doughnuts without needing a deep-fryer.
  • How to make scones.
  • How to make a no-bake cheesecake dessert.
  • How to make iced buns.

As you can probably see – that covers a TON of different aspects of baking. Of course, you can then go onto make different variations of all these recipes (they’re elsewhere on the blog) after perfecting these techniques.

Most of my recipes boil down to one of those 7 bullet points listed above, so once you’ve worked your way through this course, you’ll be equipped to bake anything gluten-free!

Gluten-free baking masterclass: Equipment You’ll Need

As you can imagine, as this course covers a wide range of different bakes, you’ll need specific baking tins and a few other bits and bobs to pull it off. Here’s a few bits that you’ll need:

Oh and don’t forget some baking paper. I always use BacoFoil non-stick baking paper. Everything else always seems to stick!

Gluten-free baking masterclass: Essential Ingredients You’ll Need

This isn’t an exhaustive list (otherwise you’d be here all day) but these are the common ingredients you’ll need for nearly all of these recipes.

You can find gluten-free flour and xanthan gum down the free from aisle. I think you probably know where to find the rest!

  • Gluten-free plain flour and self-raising flour (I used FREEE by Dove’s Farm).
  • Xanthan gum
  • Gluten-free baking powder
  • Butter (or Stork hard margarine as a dairy-free alternative)
  • Eggs
  • Milk (dairy-free if needed)
  • Caster sugar, light brown sugar, golden caster sugar and icing sugar
  • White / milk chocolate chips (dairy-free if needed)
  • Vanilla extract

By the end of this Gluten-free Baking Course…

…you will be able to confidently:

  • Bake a gluten-free sponge with great rise, that doesn’t sink in the middle or turn out crumbly.
  • Bake brownies/blondies that are gooey and fudgy – NOT cakey.
  • Bake cookies that are crisp on the outside, but soft and chewy in the middle. NOT hard like a biscuit!
  • Bake biscuits that don’t spread or crumble when you eat them.
  • Bake scones that are lovely and soft in the middle.

Lesson 1: Gluten-free Scones

Did you know that it’s incredibly easy to make gluten-free scones that taste exactly like ‘real’ scones?

In this lesson, you’ll learn how to whip up the dough as well as tips on ensuring that you get a good height on them once baked.

Plus, I’ll show you how to cut them without overworking the dough, which can otherwise result in a dense middle.

The result is a scone with a lovely, chewy exterior and soft, fluffy centre that’s perfect with butter, jam and cream (I won’t start debating what order they should be in! )

Lesson 2: Gluten-free Victoria Sponge Cake

This is an absolute classic that no gluten-free person should have to miss out on.

The reason I chose to include this in this course is because once you’ve mastered this, you can master ANY kind of sponge cake.

Plus, you can also use the sponge recipe for birthday cakes, you can mix it up with a little lemon extract and spread curd in the middle instead, for example. Use it however you wish!

I make this using the all-in-one method so it’s super easy to throw together. It ends up being lovely and golden – plus, I’ll show you how to make 5 star buttercream too.

Lesson 3: Gluten-free White Chocolate and Raspberry Cookies

You just absolutely cannot buy gluten-free cookies like this. They’re the type of cookie that you find in bakeries, coffee shops… basically everywhere! But of course, they’re never gluten-free. However, you can so easily make your own at home, so no need to miss out.

In this lesson, you’ll learn how to make perfect cookie dough that’s ready to be rolled into balls. It’s important not to over-bake these so they retain a nice, chewy centre, but you’ll see exactly what I mean in the video lesson below.

They’re crisp on the outside, chewy in the middle, packed with white chocolate chips and sharp raspberries.

Keep the muggles away from these – they’re too good to share!

Lesson 4: BEST EVER Gluten-free Brownies

This lesson is super important because so many gluten-free folks get sick and tired of gluten-free brownies being the only option we can eat. Gluten-free brownies get such a bad name as a result!

HOWEVER – gluten-free brownies should be something we can’t resist, not a last resort! In this lesson, I’ve made it my mission to show you how to make my BEST EVER gluten-free brownies that will (hopefully) restore your faith in them.

They’re insanely gooey, fudgy, chocolatey and indulgent – NOT cakey or like chocolate cake at all. These are the kind of brownies that go perfect with vanilla ice cream!

Best of all, you only need 6 ingredients to bake them AND they’re so incredibly simple.

Lesson 5: Gluten-free Baked Jam Doughnuts

Who doesn’t miss a jam doughnut?! I made these jam doughnuts for ALL you folks who haven’t had one in years.

Best of all, they’re baked, not fried, so there isn’t tons of oil spatter to clean up, or loads of oil wasted. You can simply just bake them in the oven!

In this lesson you’ll learn how to make a fluffy baked doughnut which you can then fill with jam once baked. I also show you how to put jam in the middle BEFORE baking, if you’d prefer.

This recipe is a perfect little hack that makes making doughnuts a doddle.

Lesson 6: Gluten-free Blondies

So often, gluten-free cakes and bakes are often restricted to familiar options. But then, we miss out on wonderful, more adventurous bakes like blondies.

Blondies are vanilla brownies – they have the same crisp top, with a fudgy middle, but a whole different flavour and look entirely.

The vanilla flavour works so well with white chocolate and the end result is absolutely divine.

Best of all and unlike brownies, you can mix this all up in one-bowl, so they’re even easier to make. Who could resist?!

Lesson 7: Gluten-free Chocolate Chip Shortbread

You absolutely cannot beat shortbread that you bake yourself at home. It’s buttery, sweet, a little crumbly with a lovely snap.

Throw in the chocolate chips and you just can’t beat them!

Biscuits can spread in the oven, so that your perfectly cut out shapes turn into flat pancakes that are more like pastry than shortbread.

In this lesson I’ll show you how to avoid this at all costs, so they come out perfect, every time. To ensure zero spreading, I’d highly recommend using a hard block of margarine for this recipe.

Lesson 8: Gluten-free No-Bake Crunchie Cheesecake

Despite being a gluten-free baking course, this next one is 100% no-bake! Yep, there’s no need to even switch your oven for this and no gluten-free flour required – it’s that easy.

I decided to include this lesson because gluten-free options for dessert are often so limited and even very unexciting when there are options.

Yet, when it’s so incredibly easy to make the ULTIMATE gluten-free Crunchie cheesecake… what’s the excuse, really?

In this lesson I’ll show you how to whip up the filling to perfection so you don’t under mix it, or OVER mix it, causing it to split. In either scenarios, the cheesecake won’t set, so be careful at this point. Watch and learn!

Lesson 9: Gluten-free ‘Oreo’ Cookie Brownies

Every gluten-free baker needs a showstopper in their arsenal and this is mine. Whip this one out whenever you need to prove to people that gluten-free baking doesn’t need to taste gf AT ALL.

It’s three magical layers – a cookie dough base, a layer of gluten-free ‘Oreos’, a layer of gooey, fudgy chocolate brownie, finished with more gf ‘Oreos’.

In this lesson I’ll show you how to make the cookie dough base AND the brownie layer and bake them, whilst ensuring that the bottom layer doesn’t over bake and turn into a hard biscuit.

It’s incredibly simple, but looks and tastes so incredibly gooo!

Lesson 10: Gluten-free Vanilla Cupcakes

Taking things back to basics – a good gluten-free cupcake is easy to master. But I think that if you’ve reached lesson 10 – we can go one step further.

Not only will I show you how to make super light and fluffy vanilla sponge cupcakes, but I’ll show you how to make buttercream that holds perfectly when piped.

But wait – there’s more! I’ll also show you how to core each cupcake so you can fill them with jam. These are the little types of finishing touches that us gluten-free people NEVER get to enjoy.

It’s all much easier than you’d think and this is the perfect mini baking project to get stuck into.

Lesson 11: Gluten-free Iced Buns

In this lesson I’ll be showing you how to make perfect little iced buns without yeast. That means it’s much quicker and easier because we don’t need to wait ages for them to prove.

These are sweet little buns that are fluffy in the middle, topped with a sweet glacé icing – yep, I’ll be showing you how to make a different type of icing in this one. Don’t worry, this is the easiest icing of them all!

My gluten-free iced buns are best enjoyed on the day you bake them as they can dry out fairly quickly. I’d recommend only icing the ones you wish to eat, saving the ‘naked’ ones in an air-tight container.

Then, when you wish to enjoy one, simply refresh in the oven or microwave, THEN ice them. They’re incredibly easy to make, so let’s get started!

Lesson 12: Gluten-free ‘School Dinner’ Traybake

See? There’s so much you can do with a simple gluten-free sponge cake recipe once you’ve mastered it.

In this lesson I’ll be showing you how to pair it with glacé icing and bake an epic school dinner-style traybake. Just add custard!

As we’re not baking these in two round tins, the cooking time is slightly different, so pay close attention to the cook time.

The result is a lovely, golden vanilla sponge, topped with sweet icing and gluten-free sprinkles that nobody would ever know is gluten-free.

Lesson 13: Gluten-free Coffee and Walnut Cake

And once you’ve mastered the art of gluten-free sponge cakes, you really can bake ANY kind of sponge cake.

Instead of using the all-in-one method for this beauty, I bake this using the creaming method. This involves gradually adding each ingredient and mixing in-between, as opposed to bunging them all in at once and mixing.

As there’s more ingredients in this type of sponge, it’s best to do it this way to ensure everything is mixed in properly.

I’ll even show you how to make a coffee-flavoured buttercream in this lesson too that’s super light and fluffy. I don’t even drink coffee and I cannot get enough of this cake – it has a coffee caramel flavour that I know you’ll love.

Lesson 14: Gluten-free Banana Bread

And if you’ve made it this far through my gluten-free baking masterclass (well done, you!) then you can definitely master my gluten-free banana bread recipe.

In this recipe, I add a few chocolate chips to make choc chip banana bread, but you can always omit those and stick to the original 6 ingredients – it’s up to you.

Just ensure that your bananas are super ripe before you attempt this – it will only make it taste even better.

Make this and you’ve now conquered sponge cakes, cupcakes, traybakes AND a loaf cake too. You can do this!

Lesson 15: 3-Ingredient Nutella Brownies

And since you’ve worked so hard, how about a super-easy one to finish? Yep, you can actually make super fudgy, gooey Nutella brownies using just 3-ingredients.

Though incredibly simple, I absolutely had to include this in my course. Why? Well, there’s a perception out there that gluten-free baking always has to be super difficult and hard – a bit like a science experiment!

But it’s definitely not true. And if you’re still skeptical, then this recipe was absolutely made for you!

When you need a gluten-free bake ASAP and you don’t have the time (or energy) to make something, keep this recipe in your back pocket. It never fails and it never fails to please anyone who eats one!
