It’s Comic Relief on Friday. I’ve always been a big fan of what it stands for in trying to free the world of Poverty. Red Nose Day encourages everyone to do something funny for money which hopefully means as many people as possible can get involved whilst never moving too far away from the very real messages behind the day. I know that some folk may like to shave their heads, or sit in a bath full of beans, but for me, I’ve always stood firmly in the charity bake sale realm. All of my Red Nose Day recipes are things that I have missed eating because of my gluten intolerance & Mark has missed eating because of his lactose intolerance. Therefore I have made sure all 3 Red Nose Day recipes are gluten free and dairy free. They are all simple to make using only store cupboard and fridge items. They are simple enough for kids to make too and I think all of them have such a fun element that kids would love to make these and eat them with all their friends too!
Firstly, numero uno of my Red Nose Day recipes is a fun gluten free, dairy free & vegan Jammy Dodger Recipe! You might know them as Linzer Biscuits or Jam Sandwich Biscuits, but to me they have always been Jammy Dodgers! Ever since I became gluten intolerant I have missed Jammy Dodgers, they are a very nostalgic little biscuit! Secondly, numero dos of my Red Nose Day recipes is not only gluten free & dairy free but it is important to mention this is also oat free! An oat free flapjack! Now I know usually the main ingredient in a flapjack is oats but the thing is it doesn’t matter whether a packet of oats says ‘gluten free’ on it or not… they don’t agree with me. Therefore this oat free bakewell flapjack recipe is perfect. I love the flavours of Bakewell Tarts and I love Flapjacks so this combination works really well. The bakewell flapjacks are made using rice flakes (which I purchase from Delicious Alchemy) instead of oats which are much kinder on the stomach but still have plenty of benefits for you. Finally, numero tres of my Red Nose Day Recipes is the one all the Red Noses love… the bright RED iced donuts (doughnuts!). They are completely gluten free & dairy free of course and are really easy to make. If you haven’t got one I would recommend buying a donut tin for this recipe.. its well worth the investment as I guarantee you will be making these again and again! & the best thing is… the reason that you need a donut tin is because these cheeky red donuts are NOT FRIED, they are BAKED! They only take about 15 minutes to cook in the oven and once iced look like something that Homer Simpson would inhale! I guarantee they would beat any donut he (or you) have ever tried!
