I hope you’re ready for another brownie post today! Because that is what you are getting! The lovely Amanda at Hill Cottage Bakery very kindly sent me out a ‘Walnut Brownie Mix’ a couple of weeks ago and I have only just got round to trying it out! I’m so glad that I made time for it during my busy university exam schedule as it was so worth it!
Now on with the written review!
The Walnut Brownie Mix is both dairy and gluten free which is a huge bonus for myself and Mark as I can’t eat gluten and he cannot eat dairy so we were really excited to try the mix out. The mix comes in a cardboard tube with some pre cut greaseproof paper to save you some time. All that you need to provide is 2 eggs, 80ml of olive oil and a 7 inch square baking tin, oh and I guess an oven & some oven gloves wouldn’t go amiss either!
It really is as simple as it seems… pour the mix into a bowl and beat in the two eggs and the oil. Once it’s all beaten in spoon the mixture into your grease-proofed tin and chuck in a fan oven for around 15 minutes at 180 degrees. The oven we used wasn’t a fan oven so they needed slightly longer however. (The mix makes 9 fairly generously sized brownies)
The brownies emerged from the oven victoriously soft and slightly gooey still, just how good brownies should be. After leaving them to cool we cut them and lifted them out of the tin. A mistake on our part was taking them out when they weren’t completely cool which made it slightly harder, but we really couldn’t resist as they looked and smelt amazing! They just had to be tried!
I tried one immediately when it was slightly warm still, the texture was amazing, still gooey in the middle but perfectly firm on the outer edge. The walnuts within the mix are a perfect addition and give the brownie that distinct nutty flavour that works incredibly well.
Mark has just sat and eaten two brownies with some ice cream in one go so I really do have to get his opinion on them as well…
MARK: “As someone who can’t ordinarily eat anything remotely chocolately, these brownies were a welcome break from my usual restrictions! Its reassuring having baked them ourselves that I know full well that no dairy or anything nasty has gone into them so I can truly relax and enjoy them.
I look forward to rationing those 9 brownies across the rest of the week but I fear they may not last beyond the next two days! Four down… five to go…”
So yeah as you can tell we are rather massive fans of this brownie mix. I know that lots of people like to do all the cooking from scratch if they are going to bake anything… I am usually the same. I often like to not take shortcuts as I enjoy baking too much, but sometimes it is just nice to have something ready to eat in a really short space of time that is freshly baked. It’s the kind of product that would always be good to have in the cupboard just in case at the very last minute you have some friends coming round and you really fancy making some baked goods to have with a coffee and a gossip!
I really would recommend giving this mix a try whether you are a ‘pre-mix novice’ like myself or a regular purchaser of pre done baking mixes.
