Gluten-free No-Bake Millionaire’s cornflake bars recipe – that was quite a mouthful, wasn’t it? Well, they are quite literally! With three layers of pure bliss, you won’t believe how quick and simple this is to make.
As much as I love making proper, chunky gluten-free Millionaire’s shortbread from scratch, these beauties aren’t only easier and quicker to make, they taste like something entirely different altogether!
Instead of having your regular, buttery, shortbread base, you’ve got a wonderfully crispy, crunchy, base of cornflakes, sweetened with melted marshmallow.
They taste exactly like all the treats you might remember having as a kid! But of course, you’ve then got a layer of golden caramel and a thick, chocolatey top.
It’s a symphony of sweetness, different textures and creamy milk/white chocolate. And best of all, nobody would ever know that they’re gluten-free!
And because there’s no shortbread base to bake, that makes these totally no-bake. That means no gluten-free flour or oven required!
Of course, they’ll still need time to chill so that the caramel and chocolate can set, but the actual effort you have to put in to make this is pretty minimal.
And plus, this one is perfect if you have little helpers in the kitchen who can whip up that cornflake base for you!
These come out tall and chunky, so it’s up to you whether you chop them into 9 big squares, or 16 smaller squares, which makes them more bite-sized.

For the base:
- 200g gluten free cornflakes
- 200g marshmallow
- 50g butter
For the caramel:
- 185g butter
- 35g golden caster sugar
- 65g golden syrup
- 397g condensed milk (1 tin)

- 80g white chocolate

Can I make this recipe gluten free?
It is gluten free, though nobody would know just by tasting it – trust me!
Bear in mind that minimising cross-contamination is hugely important if you’re Coeliac or making this for someone who is. Here’s some tips from Coeliac UK on minimising the risk of cross contamination.
Also, make sure that all ingredients used don’t have any gluten-containing ingredients. Then make that that they also don’t have a ‘may contain’ warning for gluten, wheat, rye, barley, oats (which aren’t gf), spelt and khorasan wheat (aka Kamut).
Here’s some more info from Coeliac UK on identifying safe gluten free products. Double check your sprinkles to make sure they’re gf too.
Can I make your gluten-free No-Bake Millionaire’s cornflake bars recipe dairy free?
I haven’t personally tried it, but you’re welcome to give it a go! I’d recommend trying a coconut condensed milk like this instead of condensed milk.
Then, of course use dairy-free chocolate and Stork hard margarine instead of butter. It is possible, but I can’t guarantee the end result with this until I try it for myself. But you’re welcome to give it a try before I do!

If you follow the advice above to make this dairy-free, then all you need to do is ensure that you gluten-free cornflakes and marshmallows are vegan.
Is your gluten-free No-Bake Millionaire’s cornflake bars recipe nut free?
Yep, this is a nut-free recipe as far as ingredients go, BUT make sure you check the ingredients label on ALL the products you use just to be safe.
Even if the products don’t contain nuts, they may have a ‘may contain nuts’ warning due to being produced in a factory that handles nuts.
You can never be too careful so always read the labels on everything first.
Is your gluten-free No-Bake Millionaire’s cornflake bars recipe low FODMAP?
Unfortunately, due to the high dairy content, this recipe is not suitable for the elimination phase of the low FODMAP diet. Once you’ve successfully reintroduced dairy, only then should you consider enjoying this during the maintenance phase of the diet.
Making this dairy-free using the instructions above doesn’t change matters either, due to the high coconut content. Coconut can be high FODMAP in large quantities!
Can I make your gluten-free no-bake millionaire’s cornflake bars recipe in a food processor or standing mixer?
This is one of the few recipes where I’d say definitely not! All you need to do is mix cornflakes with melted marshmallow and butter, so a stand mixer or food processor is definitely overkill for just that!
Can I make your gluten-free no-bake millionaire’s cornflake bars recipe by hand?
Yep, I make this entire recipe by hand and I’d recommend that you do too. A simple silicone spatula is more than enough here.
Do I need any special equipment to make your gluten-free no-bake millionaire’s cornflake bars recipe?
As I mentioned, you can easily make this entire recipe by hand, so you certainly don’t need any crazy appliances or anything like that.
What you will need however is a 9″ square baking tin – here’s the one I use.
Do I need weighing scales to make your gluten-free no-bake millionaire’s cornflake bars recipe?
In short… yes, yes and yes! And I wouldn’t advise attempting any my recipes without them. One of the worst things you can do in any recipe is alter the quantities by mistake or on purpose.
(unless you know what you’re doing of course)
Why? Well, you’re sort of just gambling with the recipe and praying that it turns out ok, don’t you think? And I’ve generally already done the hard work there for you, so you don’t have to do the guesswork with measurements!
A lot of work went into fine tuning ratios and quantities so I wouldn’t mess around with them unless you really know your stuff. I’d recommending using digital cooking scales like these so you know you’re getting an accurate measurement and replicating my recipe as accurately as poss.
Can I make this recipe using milk instead of condensed milk?
No, please don’t! Condensed milk is basically milk with all of the water removed through evaporation making it thicker, usually with sugar added to ensure it’s super sweet.
Because of that, regular milk won’t cut it – condensed milk is totally different. You can of course make your own condensed milk so that’s something!

I can understand the need to reduce sugar in our foods, but sugar is integral to the structure of this bake – it’s not just for adding a sweet taste!
The sugar helps the caramel to set and if it doesn’t set… you’ll just be left with a big splodgy mess when you try and cut them.
Can I use tinned caramel instead of making the caramel?
Definitely not! The caramel in the recipe is a set caramel, so once cooled, it sets and holds perfectly.
Tinned caramel is more like a gooey caramel which doesn’t hold when chilled at all. You’ll end up with a big mess because it won’t set!
How long can I keep your gluten-free no-bake millionaire’s cornflake bars for?
In an airtight container, they should last up to 5-6 days.
Can I freeze my gluten-free no-bake millionaire’s cornflake bars?
Yep! You can freeze them for up to 2-3 months without a problem – just make sure you put it in an airtight plastic container. It’s probably a good idea to slice it all first so you can defrost a slice at a time.
A single slice should take around 4-5 hours to thaw at room temperature.

Gluten-free No-bake Millionaire's Cornflake Bars Recipe

For the base:
- 200 g gluten free cornflakes
- 200 g marshmallow
- 50 g butter
For the caramel:
- 185 g butter
- 35 g golden caster sugar
- 65 g golden syrup
- 397 g condensed milk 1 tin
For the topping:
- 200 g milk chocolate
- 80 g white chocolate
Instructions
To make your base:
- Prepare an 8x8 inch square tin with non-stick baking paper.
- Measure out your cornflakes and crush them a little. Don't crush them all super fine, mix it up for a bit of texture. I actually did this with my hands!
- Place your marshmallows and butter into a large saucepan and allow to melt on a low heat. Keep stirring so it doesn't stick to the bottom of your pan.
- Once smooth and very sticky remove from the heat and add your cornflakes to the pan. Mix them so all the flakes are coated.
- Then place your mixture into your tin. Press it down as tightly as you can, it's very sticky but I find it becomes less and less sticky so keep pushing it in. You can use your hands or the back of a spoon works well too.
To make your caramel:
- Place all your caramel ingredients into a saucepan on a low/medium heat. Allow the butter to melt and the sugar to dissolve. Mix well to ensure it doesn't stick to the bottom and is combined.
- Once the sugar has dissolved and the butter melted, turn the heat up so the mixture starts to bubble a little. Keep stirring continuously for about 5 minutes (although I often going to about 7/8 minutes), the mixture should have thickened and also developed into a darker golden colour.
- Pour on top of your cornflake layer, spreading it so that it's even. Place in the fridge to set I tend to leave it for no less than 90 minutes.
To make your topping:
- In separate bowls melt your milk chocolate and your white chocolate. You can do this in the microwave, or in a bowl over a saucepan of boiling water on the hob. If you melt it in the microwave, make sure you mix it every 20 seconds or so to ensure the chocolate doesn't burn.
- Pour your milk chocolate all over the top of the set caramel layer. Make sure it spreads evenly to the edges.
- Spoon on blobs of your white chocolate and using a skewer or a knife, swirl the chocolate around to make some random patterns!
- Place back in the fridge to allow the chocolate to fully set. This often takes a couple of hours.
- Once fully set, remove the millionaires from the tin and slice into squares. To help the chocolate top not to crack - remove the millionaires from the fridge about 30 minutes before you want to cut it. Also I find that warming your knife on hot water before each cut, helps the knife to slide through the chocolate. Enjoy!
