Gluten Free Blueberry Muffins can be so easily adapted into something even more delicious. Step aside ‘plain’ Blueberry Muffin… HELLO Gluten Free Blueberry Layered Muffins!
1) Heat blueberries & a little water, allow to cook down.
2) Sieve your mixture, so it is smooth.
3) Make a standard dairy free buttercream and add a small tsp or so of the blueberry sauce, for both colour and flavour.
4) Grab a Gluten Free Blueberry Muffin, I used a Udi’s one.
5) Cut your gluten free blueberry muffin evenly into 3 layers.
6) Evenly spread a layer of blueberry buttercream on 2 layers.
7) Press the layers together, mmm!
8) Drizzle a little blueberry sauce over the top & add a blueberry!
9) Why not make another for a friend (or for you!)
Quite simply… Muffinificent!!
