Gluten-free puff pastry pizza pinwheel recipe, anyone? The pastry is light, crisp and puffy with pizza sauce and mozzarella stuffed inside. What more could you ask for?
My gluten-free puff pastry pizza pinwheel is a proper people-pleasing party on a plate. And yes, anyone who wants to eat this has to read that sentence aloud three times quickly first. Apart from you of course!
I’ve seen in the Facebook group that a lot of people referring to the shortage of gluten-free puff pastry in supermarkets as the ‘Becky Excell effect’… and whilst I can’t take full credit and/or blame for this, there’s no denying I do love to use it my recipes a lot! Fortunately, in the last couple of days, I’ve received a lot of messages saying it’s back in stock across supermarkets, so if you want to make this, you’d better hurry and get some!
But whether I can be blamed or credited for the shortage or not, I think it’s because the JusRol gluten-free puff pastry isn’t half bad! Granted, it doesn’t work quite as well as the gluten-containing version for everything, but its taste, texture and puff works exceptionally well for anything that’s generally quite flat – like in this recipe!
So now you know what one of the four ingredients is, here’s a full breakdown of everything else you’ll need…
Gluten-free puff pastry pizza pinwheel recipe: What you’ll need…
- Gluten-free puff pastry: I used gluten-free Jus-Rol pastry for this recipe which you can find in chilled free from sections in Tesco, Waitrose and Sainsburys. Remember: you’ll need two sheets (two packs) for this recipe.
- Pizza sauce: Of course, you can just buy this in a jar; but due to my intolerance of onion and garlic, I usually just make my own using 100ml passata, 1/2 tsp dried mixed herbs and a pinch of salt and ground black pepper.
- Mozzarella: Make sure it’s grated when you buy it! I sprinkle a little parmesan on at the end too, but that’s totally optional.
- Egg: This is just for egg wash, so small, medium or large is fine here.
This is essentially the perfect gluten-free party food centrepiece, being a sharing-style dish that guests can just yank a mini pizza twist off of. Each twist is golden, with a subtle crunch and a gooey blend of pizza sauce and mozzarella hiding inside.
Once all the twists have vanished, what’s essentially left in the middle is a mini pizza pasty! So you can all fight over who gets that part 😆
One important tip I should impart here is that Jus-Rol gluten-free puff pastry really shines when you cover it with foil after around 10-12 minutes (or at the point at which it basically looks golden brown all over).
And that’s because, after 10-12 minutes in the oven, the pastry is usually perfect, light and golden already – any longer than that and it can turn browner (not burnt per se!) and can become quite overly crunchy. But with a little foil intervention once it’s looking lovely and golden, the top layer stays crisp and the inner layers stay light and delicate. Trust me, it’s worth doing!

Can I make this recipe gluten-free? Is it suitable for Coeliacs?
It is gluten-free, though nobody would know just by tasting it – trust me!
Bear in mind that minimising cross-contamination is hugely important if you’re Coeliac or making this for someone who is. Here’s some tips from Coeliac UK on minimising the risk of cross contamination.
Also, make sure that all ingredients used don’t have any gluten-containing ingredients. Then make sure that they also don’t have a ‘may contain’ warning for gluten, wheat, rye, barley, oats (which aren’t gf), spelt and khorasan wheat (aka Kamut).

How do I make this recipe dairy-free?
Easily, with one simple swap:
- Use grated dairy-free cheese instead of mozzarella and Parmesan, if using.
Can I make your gluten-free puff pastry pizza pinwheel recipe vegan?
Yep! If you follow the instructions above to make this recipe dairy free, then all you’ve got left to contend with is the egg.
Instead, use 3 tbsp of dairy-free milk mixed with 1.5 tsp of maple syrup and brush on as ‘egg wash’. Simple!
Is this recipe low FODMAP?
This recipe isn’t low FODMAP as it uses jarred pizza sauce. However, if you made your own pizza sauce (using 100ml passata, 1/2 tsp dried mixed herbs and a pinch of salt and ground black pepper) instead, it would make it suitable for the elimination phase of the low FODMAP diet.

You can buy it in Tesco, Waitrose and Sainsburys in the chilled free from sections.
How do I make my own pizza sauce?
Simply combine:
- 100ml passata
- 1/2 tsp dried mixed herbs
- pinch of salt and ground black pepper
And optionally a small drizzle of garlic-infused oil (or olive oil) mixed in too, if you have it. That’s it!
Gluten-free puff pastry pizza pinwheel recipe: Tips for perfection!
- Don’t go crazy when spreading the tomato sauce – too much can make the pastry soggy, or it might just leak out everywhere…
- Preheat your oven and wait for it! Puff pastry puffs more when plunged straight into a hot oven.
- Egg wash matters! That beautiful golden shine comes from the egg wash so don’t expect it without it.
- Cover with foil after 10-12 minutes of baking. Once it looks golden and beautiful – cover it so the pastry on top doesn’t get overdone.
- Enjoy with your favourite dip. Trust me, a good dip is the perfect finishing touch – a blue cheese sauce or a garlicky sauce works well here.
Gluten-free Puff Pastry Pizza Pinwheel Recipe
Ingredients
- 2 gluten-free puff pastry sheets I used Jus-Rol
- 6 tbsp pizza sauce or make your own (see FAQ section)
- 1 handful mozzarella grated
- 1 egg beaten, for egg wash
- 3 tbsp Parmesan (optional) grated, for sprinkling on at the end
Instructions
- Preheat the oven to 180C Fan / 200C. Line a baking sheet with baking paper. Unroll one of the puff pastry sheets and place on the baking sheet on the tray. Place the other sheet on a separate sheet of baking paper.
- Use a side plate and cut out a round circle in both sheets of puff pastry. Don’t waste the rest of the pastry – re-use it for something else!!
- Spread a few tablespoons of the pizza sauce onto the circle on the baking tray, leave a little bit of a gap around the edge. Sprinkle with lots of grated mozzarella and place the other puff pastry circle on top.
- Place a small circular plate or bowl (around four times smaller than the size plate used earlier) in the centre of the circle and then cut even strips all around it. When cutting the strips, think of the entire thing like dividing a pie into lots of tiny slices – it helps to cut the circle into quarters first, then half each quarter etc.
- Twist each strip twice so they look like mini cheese twists and be careful not to tear the pastry!
- Brush with beaten egg.
- Bake for 15-20 minutes, or until risen and golden brown – cover with foil after 10 minutes if it starts to get too brown.
- Transfer to a serving board and enjoy!
