What Do YOU Eat In A Day? I’d imagine you can’t answer this as every day is different. Here’s a sneak peak into a random January day for me, sharing What I Eat In A Day! Oh & it’s all gluten free, dairy free & refined sugar free too!
So when it comes to what I eat each day whilst living on a gluten free, dairy free and for the most part a very low sugar diet, you might expect that I am somewhat restricted… you’d be wrong. In fact in the past 6 years of eating gluten free I have actually discovered a whole host of different foods and meals to enjoy – some that I may never have tried had I always been able to eat gluten!
Being a complete nosey parker, I absolutely love watching What I Eat In A Day videos. I find them really interesting & often they provide me with plenty of inspiration too. So, I thought it might be a nice idea to share with you on a fairly regular basis what I eat in a day! Of course every single day of my life varies so this is just a very random day, but across 2016 I will be sharing more days with you.
Breakfast
So for breakfast there is never one set thing I have, I like to mix it up (quite literally). At the moment I am very into my smoothies and have been creating some of my own, as well as using recipes from my cookbook collection. I used to think that essentially having just a ‘drink’ for breakfast wouldn’t be filling enough and would leave me unsatisfied… how wrong I was. By putting the right foods into your blender (NutriBullet for me!), you really can make something that’s exciting, delicious and filling.
My breakfast smoothie on this particular day was Chocolate & Banana. Not a flavour combo that in the past I would think of to be all that healthy, but it really can be. I simply just blended together Cacao Powder, Banana, Almond Butter, Almond Milk, Cinnamon, Chia Seeds and some Ice – you must try it! Filled with lots of great food types to start your day right as well as being gluten free, dairy free, refined sugar free & vegan. What’s your favourite breakfast smoothie?!
Lunch
At lunch time this time of year I often like to have something hot. I am not a fan of having a big hot lunch, like a full meal; I find it sends me to sleep in the afternoon! However, soup is the perfect balance. Soup is warming, yet not massively filling. Making your own soup is really easy too. It allows for you to have whatever flavours you wish & ensures your soup is gluten free, dairy free, vegan & full of absolutely no added sugars or nasties.
On this particular day I decided to make a Carrot & Coriander Soup. I often make this flavour as it’s a soup made of 4 ingredients, all of which I always have in the cupboard. It’s simple and quick to make from scratch & you can make a big batch all at once and freeze some if you want to have an even quicker lunch another day. I think it makes for a great meal to not only take to work, but, if you had somebody unexpectedly coming round at lunchtime, I don’t think anyone could resist a steaming bowl of fresh soup.
For me, I love to have some gluten free bread with my soup too. I know everyone is different, but personally, soup without bread is a crime. Bread makes soup better and soup certainly makes gluten free bread better. It really soaks up the soup & makes it nice and moist! It’s the perfect lunch in the winter months for me!
Dinner
Dinner is such a madly varied meal for me. We have so many different dishes we make, we’ve had to write them all down to remember them! One of my absolute favourites though is homemade sushi! We’ve visited many sushi restaurants over the years, but a year or so ago we decided it might be nice to try to make our own… we’ve never looked back! Not only does it taste amazing, it’s loads of fun too!
You can put whatever you like in sushi to ensure it is gluten free, dairy free & even vegan if you wish… veggie sushi is really delicious too. For us on this particular day we decided to make a mix of California Rolls and Maki. So we made ones where the seaweed is on the outside, and then essentially inside out sushi rolls too. We filled them with Salmon, Prawn & Avocado. They taste so fresh and when making your own, you can always squeeze a little bit more filling in than usual! For me, homemade sushi is a really balanced meal filled with a little bit of everything. It’s ace!
