Mini Eggs nest cakes recipe – yup, no need for any flour and no need to turn the oven on. Best of all, they only take 15 minutes to make, then all you need to do is chill. The nest cakes first, then you can chill whilst they set!
Would it even be Easter baking season without my own version of those cute, little mini egg nest cakes? Well, I’m sure you’d survive, but here they are anyway!
And when they take so few ingredients to make, it’s hard not to make them, if I’m honest.
Plus, ‘Mini Egg season’ only exists for a limited period, so make sure you give this recipe a go before they disappear from supermarkets until next year!

The ‘nest’ is super crispy and crunchy thanks to the cornflakes, coated in butter, chocolate and golden syrup, giving them a rich, indulgently chocolatey flavour with a sweet finish.
And of course, who could forget the centre-piece – Mini Eggs! I’m sure you’ve heard me describe how they taste a billion times already throughout the mountain of Easter recipes I’ve done this year…
So I’ll just describe them as this: Easter-tastic. Is that a word? Oh well, I’ve used it now and obviously, there’s no such thing as a delete button.

- Butter: This not only gives a lovely, rich taste, but also helps in binding the cornflakes together. After all, butter will always set hard once cooled!
- Golden syrup: Though this has a lovely buttery taste too, its sticky, gooey texture will help to bind the cornflakes together before the butter and chocolate set them in place.
- Chocolate: Use milk or dark chocolate, or a combo of both – it’s up to you!
- Gluten-free cornflakes: I’ve chosen cornflakes as I feel they look a little more ‘nest-like’ but feel free to use gluten-free rice crispies too. You can find these down the free from aisle.
- Mini Eggs: Yes, they’re gluten-free! You’ll find them down the seasonal aisle in the supermarket along with all the Easter eggs.

Can I make this recipe gluten-free?
Just use gluten-free cornflakes and this recipe is 100% gluten-free!
Bear in mind that minimising cross-contamination is hugely important if you’re Coeliac or making this for someone who is. Here’s some tips from Coeliac UK on minimising the risk of cross contamination.
Also, make sure that all ingredients used don’t have any gluten-containing ingredients. Then make sure that they also don’t have a ‘may contain’ warning for gluten, wheat, rye, barley, oats (which aren’t gf), spelt and khorasan wheat (aka Kamut).

Yes, you can easily make this dairy-free with a few simple swaps:
- Use dairy-free chocolate.
- Use Stork hard margarine instead of butter – don’t use spreadable dairy-free margarine for this one!
- Use dairy-free Easter chocolate instead of Mini Eggs.

Is your Mini Eggs nest cakes recipe low FODMAP?
If you omit the mini eggs and use lactose-free chocolate, you’ll have made low FODMAP chocolate nests! Top them with whatever FODMAP-friendly Easter treats you can get your hands on.
Are Mini eggs gluten-free?
Yes, they are in the UK! They don’t have any gluten-containing ingredients or a ‘may contain’ warning for gluten.

Which cornflakes are gluten-free?
Believe it or not, cornflakes aren’t always 100% free from gluten because they often contain barley malt extract.
Some of these barley-containing products USED to be certified by Coeliac UK because they contain less than 20 parts per million of gluten, which according to Coeliac UK, that makes them safe for people with Coeliac disease.
However, Coeliac UK recently changed their stance on this and will no longer be recommending them for a gluten-free diet. So here’s a list of all the cornflakes which are still safe for us to eat, that are free from barley entirely.

- Asda Free From Cornflakes
- FREEE (Doves Farm) Gluten-free Cornflakes
- Sainsburys Gluten-free Cornflakes
Can I use a food processor or stand mixer to make this?
Both are total overkill for this recipe, especially since a food processor would blend the cornflakes instead of mixing them!
I’d definitely advise making this purely by hand to avoid crushing the cornflakes as they’re being mixed. So get a good silicone spatula or wooden spoon and get mixing!
Do I need any special equipment to make your Mini Eggs nest cakes recipe?
Nope – this one is entirely made by hand!
Do I need weighing scales to make your Mini Eggs nest cakes?
In short… yes, yes and yes! And I wouldn’t advise attempting any my recipes without them.
A lot of work went into fine tuning ratios and quantities and for me, baking is all about consistency and precision. I want you to make this recipe and for it to turn out EXACTLY like mine did.
I’d recommending using digital cooking scales like these so you know you’re getting an accurate measurement and replicating my recipe as accurately as poss.

Once you can pick them up without any movement in the cornflakes, they’re ready to eat!

Mini Eggs Nest Cake Recipe - No-bake (Easter baking!)
Ingredients
- 75 g butter use Stork hard margarine if dairy-free
- 75 g golden syrup
- 300 g chocolate chopped - I used half milk, half dark but you can use all milk (dairy-free if necessary)
- 200 g gluten-free cornflakes you can also use gluten-free rice crispy cereal
- 1 large bag of Mini Eggs
Instructions
- Place your butter, golden syrup and chocolate into a glass bowl over a saucepan of simmering water and allow to gradually melt. Stir together so the mixture is combined and smooth. Remove the bowl from the heat.
- Place your cornflakes (or rice crispies) into a large bowl and then pour the melted chocolate mixture all over the top of the cereal. Mix it together so the cereal is well coated.
- Spoon your mixture into cupcake cases - the amount you make will vary depending on how big your cupcake cases are and how much you fill them up.
- Finish by adding a few mini eggs to the middle of each nest.
- Place in the fridge to chill and set. It doesn't take long. Then, enjoy!
