Gluten free KitKat bunny cookie bars recipe – yet another easy peasy Easter baking project! And yes, that’s right, something by KitKat is actually gf.
Gluten free KitKat bunny cookie bars recipe, anyone? I’m sure you know by now how much I love a good Easter baking sesh, so here’s the result of my latest creation…
Yep, that’s right, I’m back with more Easter cookie bars! Since so many of you guys loved my gluten free mini egg cookie bars recipe, I absolutely had to come back for the sequel.
And voila! Here they are – they’re the same chunky, chewy, crisp on the outside cookie bars, packed with chocolate chips. You’d never know they were gf ?
But this time, there’s a flock (totally the wrong word but it’ll have to do ?) of KitKat chocolate bunnies in them! And yes, they are gf, here’s the link so you can check and read the ingredients for yourself.
There’s no gluten-containing products and zero ‘may contain’ warning which, according to Coeliac UK, means it’s safe for us to consume ??
So pick up a few next time you’re in the supermarket (and some mini ones too as they’re also gf) and don’t forget the rest of your ingredients too. Here’s a handy list of them!
Gluten free KitKat bunny cookie bars recipe: Ingredients
- 130g butter
- 50g caster sugar
- 150g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 280g gluten free plain flour
- 1/4 tsp xanthan gum
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour (also known as corn starch)
- 200g chocolate chips
- KitKat Bunnies (mix of regular size and mini size)
Gluten free KitKat bunny cookie bars recipe: Method
Preheat your oven to 160C Fan / 180C. Prepare a 9inch square baking tin with baking paper (enough to lift out the bars later once cooked).
Add your melted butter and both sugars to a large bowl and mix together. Do this until totally combined – it will take a few minutes with a spatula by hand.
Add in your egg and vanilla extract and mix again until fully combined.
Add in your flour, xanthan gum, bicarbonate of soda, salt and cornflour and mix (I still do this by hand). It can take quite a bit of time to fully combine but you should be left with a yummy cookie dough!
Add in your chocolate chips and mix into the dough evenly. Leave a few chocolate chips out (20-30g) to pop in the top of the cookie bars.
Place your cookie dough into your prepared tin. I spoon mine in and push it to the edges making sure its an even layer without any gaps. (Get your hands in there if need be!)
Push some chocolate chips into the top of the cookie dough.
Place in your preheated oven for about 22-25 minutes until a skewer comes out fairly clean.
Remove from the oven and carefully push in KitKat bunnies into your brownies.
Allow to cool (the chocolate bunnies too!) before removing from the tin and cutting into squares. Enjoy!
