Slow cooker sausage + baked bean casserole recipe - a lazy way to the ultimate comfort food with almost zero effort! Coeliac-friendly and gluten-free.

Ingredients

  • 12 gluten-free chipolatas or 6 sausages
  • 400 g tin of chopped tomatoes
  • 2 400g tins of baked beans
  • 2 red peppers
  • 1 tsp garlic-infused oil
  • 1.5 tbsp smoked paprika
  • 1 tbsp dried mixed herbs
  • 1/2 tsp dried chilli flakes
  • 1 gluten-free stock cube
  • pinch salt and pepper

Instructions

  • Place the chipolatas in a pan and lightly brown them all over - I could do this in my slow cooker pot on the hob but you could do it in a frying pan.
  • With the browned sausages in the slow cooker, add on top the chopped peppers, garlic oil, chopped tomatoes, baked beans, paprika, mixed herbs, gf stock cube, salt, pepper and optionally some chilli flakes. Mix it all together.
  • Put the slow cooker on with the lid on for 3-4 hours on high or around 6 hours on low.
  • Finish with some chopped parsley or other herbs of choice.
  • Serve this up with lots of buttered gf bread or it works perfectly on top of a jacket potato with lots of cheese too!
