Ingredients

For the base:

  • 350 g gluten free digestive biscuits
  • 165 g butter melted

For the filling:

  • 1 Chocolate Orange Toblerone this weighs 360g
  • 300 ml double cream
  • 90 g icing sugar

For the topping:

  • Chocolate Orange Toblerone I used almost a whole extra bar, but you could use much less!
  • zest of 1 orange

Instructions

  • Firstly make your base. In a food processor, blitz your biscuits into a crumb-like texture. If you don't have a food processor you can bash them with a rolling pin as well! You do want quite a fine consistency for this though.
  • Pour your melted butter into your crushed biscuits and mix together in a bowl.
  • Spoon your mixture into a loose bottom fluted tart tin (mine was 23cm across) and then using the back of a spoon and also your hands, press the mixture into the tin - both the base and up the sides. Try to get it as even and flat as you can.
  • Chill this in the fridge for around 30 minutes - 1 hour. Whilst this is happening you can sort out your filling.
  • For your filling, melt your chocolate orange Toblerone down. You can do this in the microwave (just check on the chocolate and mix every 20 seconds so it doesn't burn) or over a bain marie. Once melted put to one side to cool, but don't let it start to solidify again.
  • In a medium bowl whisk up your double cream, after you've been whisking for about a minute, add in your icing sugar. Continue to whisk until you form soft peaks (not stiff!).
  • Fold your soft peaks cream into your melted chocolate orange toblerone until combined and smooth.
  • Pour your mixture into your chilled biscuit case, smooth over and chill in the fridge for a few hours or ideally overnight (its just easier!).
  • To serve, cover the top in lots of chopped up Toblerone and sprinkle with orange zest. As the chocolate orange toblerone only comes in the bigger size, I cut the triangles down when I add them to the topping.
  • Slice up and enjoy. Keep refrigerated :)

Notes

If you want the flavour to be even stronger of orange, you could add a little orange extract to the mixture, but I don't find this necessary!
