Mix together your eggs, milk, sugar, cinnamon and vanilla.
Take a slice of your bread and soak it in the mixture.
Heat up a frying pan with a couple of tbsp of either butter or oil.
When the pan is hot, gently place the bread into the frying pan. Cook on both sides until lovely, crisp and golden.
Remove the french toast from the pan.
Dust with icing sugar and cinnamon.
Serve up with whatever you fancy - I like mine with maple syrup, which you can easily take with you on the go. Enjoy!
