Add your gluten free bread to a food processor and whizz them into fine breadcrumbs. (I used some leftover crusts mainly)
Add your paprika, salt and pepper and whizz only for a couple of seconds to combine.
Add your breadcrumbs to one bowl, beat an egg in another and add your gluten free flour to a third bowl.
Take 1 tbsp on your mash potato and add a cube of cheese to the middle/
Roll your potato into a croquette shape. Repeat with all your potato and cheese cubes.
Roll your croquette into the gluten free flour bowl.
Next coat in egg.
Finally cover in your gluten free breadcrumbs.
Heat some oil in a frying pan and lightly fry until crisp and golden on all sides.
Serve with your favourite dip, enjoy!
