Gluten Free Cheesy Potato Croquettes

Ingredients

  • 100g Juvela gluten free bread I used the crusts for the No Pastry Quiches above!
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 egg
  • 50g gluten free plain flour
  • 400g mash potato chilled
  • cheese cut into 1cm cubes (I chose cheddar but any cheese will work the one that melts the best & tastes the best to you!)
  • oil for frying

Instructions

  • Add your gluten free bread to a food processor and whizz them into fine breadcrumbs. (I used some leftover crusts mainly)
  • Add your paprika, salt and pepper and whizz only for a couple of seconds to combine.
  • Add your breadcrumbs to one bowl, beat an egg in another and add your gluten free flour to a third bowl.
  • Take 1 tbsp on your mash potato and add a cube of cheese to the middle/
  • Roll your potato into a croquette shape. Repeat with all your potato and cheese cubes.
  • Roll your croquette into the gluten free flour bowl.
  • Next coat in egg.
  • Finally cover in your gluten free breadcrumbs.
  • Heat some oil in a frying pan and lightly fry until crisp and golden on all sides.
  • Serve with your favourite dip, enjoy!
