Ingredients

  • 2 gluten-free puff pastry sheets I used Jus-Rol
  • 6 tbsp pizza sauce or make your own (see FAQ section)
  • 1 handful mozzarella grated
  • 1 egg beaten, for egg wash
  • 3 tbsp Parmesan (optional) grated, for sprinkling on at the end

Instructions

  • Preheat the oven to 180C Fan / 200C. Line a baking sheet with baking paper. Unroll one of the puff pastry sheets and place on the baking sheet on the tray. Place the other sheet on a separate sheet of baking paper.
  • Use a side plate and cut out a round circle in both sheets of puff pastry. Don’t waste the rest of the pastry - re-use it for something else!!
  • Spread a few tablespoons of the pizza sauce onto the circle on the baking tray, leave a little bit of a gap around the edge. Sprinkle with lots of grated mozzarella and place the other puff pastry circle on top.
  • Place a small circular plate or bowl (around four times smaller than the size plate used earlier) in the centre of the circle and then cut even strips all around it. When cutting the strips, think of the entire thing like dividing a pie into lots of tiny slices - it helps to cut the circle into quarters first, then half each quarter etc.
  • Twist each strip twice so they look like mini cheese twists and be careful not to tear the pastry!
  • Brush with beaten egg.
  • Bake for 15-20 minutes, or until risen and golden brown - cover with foil after 10 minutes if it starts to get too brown.
  • Transfer to a serving board and enjoy!
