Take your 6 slices of gluten free bread and cut out a circle in the middle of each. I use a biscuit cutter for this. (You can save the crusts for making gluten free breadcrumbs!)
Carefully make the circles of bread a little thinner, either by using a rolling pin or pressing down with your hand.
Grease the holes in a muffin tray with a little oil. (I often use garlic infused olive oil)
Delicately place your flattened circles of gluten free bread into the holes of a muffin tray. (If there is a little hole it doesn't really matter all that much)
'Blind' bake these in the oven at 180C for 10 minutes.
Whilst your bread is in the oven, beat your eggs and milk together in a jug.
Once your bread cups come out the oven fill them with a little ham, grated cheese and then pour over some of your egg mixture. (The egg mixture can soak into the bread so if the egg mixture seems to disappear a little, pour some more in!)
Bake in the oven for about 15 minutes at 170C.
Gently remove from your muffin tray and top with some chopped fresh chives.
Enjoy hot or cold!
