No Pastry Gluten Free Mini Quiche

Ingredients

  • 6 slices of Juvela gluten free bread
  • 2 eggs
  • 125ml milk
  • grated cheese
  • smoked ham chopped
  • oil for greasing your muffin tray (I use garlic infused olive oil)
  • fresh chives optional

Instructions

  • Take your 6 slices of gluten free bread and cut out a circle in the middle of each. I use a biscuit cutter for this. (You can save the crusts for making gluten free breadcrumbs!)
  • Carefully make the circles of bread a little thinner, either by using a rolling pin or pressing down with your hand.
  • Grease the holes in a muffin tray with a little oil. (I often use garlic infused olive oil)
  • Delicately place your flattened circles of gluten free bread into the holes of a muffin tray. (If there is a little hole it doesn't really matter all that much)
  • 'Blind' bake these in the oven at 180C for 10 minutes.
  • Whilst your bread is in the oven, beat your eggs and milk together in a jug.
  • Once your bread cups come out the oven fill them with a little ham, grated cheese and then pour over some of your egg mixture. (The egg mixture can soak into the bread so if the egg mixture seems to disappear a little, pour some more in!)
  • Bake in the oven for about 15 minutes at 170C.
  • Gently remove from your muffin tray and top with some chopped fresh chives.
  • Enjoy hot or cold!
